— Versand Dienstag oder MittwochThe cheese has a creamy, leather-like, slightly moist yellow-brown surface. The texture is soft and springy. The taste is fruity and nutty with hints of hay. Two layers of glossy cheese are separated by a thin layer of ash. History says that first the morning milk and then the evening milk were used to make the cheese. To prevent it from being destroyed during the day, ashes were sprinkled over the curd. The smell is characteristic as the milk is unpasteurized. The taste is full of fruitiness, nuttiness and pleasant acidity. Labeled with PDO (Protected Designation of Origin).
